Ingredients:
- Pork loin or pork sirloin (thinly sliced): about 300g
- Salt: a pinch
- Pepper: a pinch
- Wheat flour: as needed
- Eggs: 2
- Breadcrumbs: as needed
- Salad oil: for frying and for the bowl
- Onion: 1 (thinly sliced)
- Dashi (Japanese soup stock): about 400ml
- Mirin (sweet rice wine): 3-4 tablespoons
- Soy sauce: 2-3 tablespoons
- Sugar: 1-2 tablespoons (adjust to taste)
- Green onions: as desired (for garnish)
- Rice: 2 servings
Instructions:
- Tenderize the pork by lightly pounding it to an even thickness, then season with salt and pepper.
- Coat the pork with wheat flour, beaten eggs, and breadcrumbs in that order. Fry in medium-hot salad oil until golden brown.
- Slice the onion thinly and sauté it in a separate pot.
- Add dashi, bring to a boil, then add mirin, soy sauce, and sugar to adjust the flavor.
- Cut the fried pork into bite-sized pieces and add them, along with the sautéed onions, to the dashi. Simmer for about 5 minutes.
- Serve rice in a bowl, then pour the dashi, pork, and onions over it. Garnish with green onions.
