Katsudon

Ingredients:

  • Pork loin or pork sirloin (thinly sliced): about 300g
  • Salt: a pinch
  • Pepper: a pinch
  • Wheat flour: as needed
  • Eggs: 2
  • Breadcrumbs: as needed
  • Salad oil: for frying and for the bowl
  • Onion: 1 (thinly sliced)
  • Dashi (Japanese soup stock): about 400ml
  • Mirin (sweet rice wine): 3-4 tablespoons
  • Soy sauce: 2-3 tablespoons
  • Sugar: 1-2 tablespoons (adjust to taste)
  • Green onions: as desired (for garnish)
  • Rice: 2 servings

Instructions:

  1. Tenderize the pork by lightly pounding it to an even thickness, then season with salt and pepper.
  2. Coat the pork with wheat flour, beaten eggs, and breadcrumbs in that order. Fry in medium-hot salad oil until golden brown.
  3. Slice the onion thinly and sauté it in a separate pot.
  4. Add dashi, bring to a boil, then add mirin, soy sauce, and sugar to adjust the flavor.
  5. Cut the fried pork into bite-sized pieces and add them, along with the sautéed onions, to the dashi. Simmer for about 5 minutes.
  6. Serve rice in a bowl, then pour the dashi, pork, and onions over it. Garnish with green onions.
